Sometimes I can’t be bothered to spend a lot of time preparing ingredients and cooking, I just want something to eat now but it must still be tasty. The reliable and generous pig gives us just the thing, it’s tenderloin (or fillet). This is original fast food, you can have it ready quicker than any pizza company can deliver to you!

Pork tenderloin with honey and mustard sauce

2 teaspoons of olive oil

500g – 1kg of pork tenderloin

Salt and pepper

2 tablespoons of Dijon mustard

2 tablespoons of honey

2 tablespoons of apple vinegar

1 tablespoon of apple juice

2 cloves of garlic, minced

In a small bowl combine Dijon mustard, honey, apple vinegar, apple juice, 1 teaspoon olive oil and the minced garlic.  Cover with plastic wrap and set aside for a few hours, allowing the flavours to infuse together.

Remove any skin from the pork tenderloin and season the meat with salt and freshly ground pepper.

Preheat oven to 180 degrees C.  Heat the remaining teaspoon of olive oil in an oven proof pan over medium-high heat.  Once hot, add the pork tenderloin and seal the meat on all sides making sure that you get some browning – this will stop the meat from drying out and will give you some lovely flavour.  Place the pan into the oven and bake for approximately 15 minutes (the time will vary depending on the size of the tenderloin). Remove from the oven, cover and let stand for 5 minutes before slicing.

Heat the sauce in a small saucepan until warmed.  Pour generously over the sliced pork and serve with creamy mash.

Delicious!!
